Every holiday I like to make Asher a special "toddler mix" as I like to call it. You have probably seen my other mixes I have posted on here. If not and you want to check them out go under categories and then toddler foods.
This mix did not go as planned. Of course for St. Patrick's Day I wanted a lot of green. Well the bags of ingredients I bought ended up lacking green. Go figure. But I made what I had work!
This mix does have a lot more sugar than I typically would like.
What I love about making these trail mixes, is that they are already prepared and such an easy grab & go to through in the diaper bag when heading out! Also I never know what snack Asher may be in the mood for. With a trail mix he has a variety of snacks!
Place all ingredients in a bowl. Mix them all together. Place a handful in a snack baggie!
I ended up adding Goldfish. I felt like the mix was missing something. It needed more color and just more food.
I make a lot of trail mixes for Asher. It gives him a variety for snack. Honestly when it is pre prepped in the baggie in the cabinet, it is just so much easier to grab and throw into the diaper bag. Since Valentine's Day is right around the corner I figured I would call this one Valentine Trail mix. Especially since I added a lot of pink and red to the mix. I wouldn't consider this just a toddler trail mix. I am really enjoying it as well!
1 Cup Craizins
1 Cup Pretzels
1 Cup Valentine M&Ms
1 Cup Vanilla Graham Goldfish
Mix them all together and portion out evenly in snack baggies
So these stemmed from my Peanut Butter cheerio bites. Asher loved them! So I tried a new kind today. I also used the same recipe and did the peanut butter ones as well. This time I made them into bars in hopes they might stay together better for Asher to hold! These were super quick and easy. These are ingredients I always have at hand in our house.
I use peanut butter a lot for Asher when he goes on his strikes of not eating. At least he is getting some source of protein? Am I right? A mom's gotta do what a mom's gotta do!

Chocolate Peanut Butter Cheerio Bars:
1 Cup Chocolate Chips
1/2 Cup Peanut Butter
1 tsp Butter
3 Cups Multigrain Cheerios
1/2 Cup Peanut butter
1/4 Cup Honey
1 tsp Vanilla
2 Cups Cheerios
I love making what I call "Toddler Trail Mix". You really can use any of your child's favorite snack. I love to meal prep, freeze, and prepare food ahead of time. It makes it super convenient for when the time comes that you need something. I made these trail mix's and place them in snack baggies. I store them in Asher's cabinet that we have at the house and use them as needed. These are great when on the go! Instead of bring 3 different snacks, (because you never know what your child will want), just throw these in the dipar bag and out the door you go! Also great for when Dad is on duty. Dad likes to feed Asher a lot of snacks. With these being in snack baggies I can portion Adam to only let Asher have 1 snack baggie. Instead of Adam letting Asher eat an entire container of puffs. Which has happened before!
1 cup M&M's
1 cup Mini Marshmellows
1 cup Golden Grahams
1 cup Pretzel sticks
1 cup Cheerios
1 box Raisins
Combine all and place in snack baggies
1 cup Craisins ( sometimes I substitue with Teensy Fruits bites)
1 cup Fruity Cheerios
1 cup Creamies
Combine all and place in snack baggie
These have been a hit lately with Asher. He is still very picky, but slowly adding more to his diet! What I love most about this recipe is how easy it is to make! Hope your little ones enjoy these!
P.S. Adults love them too!!
1 box Mac N Cheese (I use Annies Brand, it's organic & they have diffrent cheese flavors)
1/2 Cup Sourcream
1 1/2 Cup Shredded Cheddar
1/4 Cup Cracker Crumbs ( I used Ritz)
Little Asher is getting in his molars currently. He is a picky eater to begin with and when he is teething he goes on strike from eating. I knew I needed to get something in this child. This time he isn't even interested in the baked oatmeal bites. I was lucky and last night he would at least eat these. So here is how I came up with peanut butter cheerio bites.
5 cups of multigrain cheerios
1 cup of peanut butter
1/2 cup of honey
1 tsp of vanilla extract
1. Put the cheerios in a bowl and set aside.
2. Put the peanut butter in the microwave for 40 seconds.
3. Stir peanut butter and add honey. Microwave for 30 seconds
4. Stir and add vanilla
5. Pour over cheerios
6. Place parchment paper on a cookie sheet and place spoonful's of the mixture on the cookie sheet.
7. Let sit on the cookie sheet for 3 hours to set up. Then you can place them in a container to store.

I did flavors that I have not tried before and surprisingly Asher loved them! Which made me a very happy momma!
Sweet Potato & Carrot:
2 sweet potatoes
pumpkin pie spice
I boiled the sweet potatoes until tender. I then added the sweet potatoes, carrots, some water and pumpkin pie spice to the blender. Blend until smooth
Sweet Potato & Apple:
2 sweet potatoes
I boiled both the sweet potatoes and apples until tender. Added both and cinnamon in the blender. Blend until smooth
Pear & Spinach:
Handful of spinach
Add all ingredients to blender. Blend until smooth
Raspberry, Orange, Carrot:
1 small container of raspberries
add all ingredients to blender. Blend until smooth
Blueberry & Banana:
1 small container of blueberries
1 cup yogurt
Add all ingredients to blender. Blend until smooth
Mom's of picky eaters, this is for you! Asher literally went on a 3 day strike of not wanting to eating. He had snacks here and there. He did not starve! I knew I had to do something to get this little boy to eat! I was meal prepping for my husband and I and I thought "why not try one of Asher's favorite meals." His favorite thing for breakfast is baked oatmeal. So that is what I made my little boy. Baked oatmeal breakfast muffins. 3 different flavors and you can freeze them!!
This is the base recipe. Once I made this I evenly distributed the mix between 3 bowls and then added my flavors.
3 cups old fashioned oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 Bananas (Smashed)
1 cup milk
1/3 cup maple syrup
1/4 cup vegetable oil
2 teaspoons vanilla extract
1. Preheat oven to 350 degrees
2. Take 1 cup of the old fashioned oats and pour into a food processor. Pulse the oats until it is a flour consistency.
3. In a large bowl, whisk together the oats, oat flour, baking powder, cinnamon and salt.
4. In a medium bowl, whisk together the smashed bananas, eggs, milk, syrup, vegatable oil and vanilla extract.
5. Pour the wet ingredients into the dry ingredients and stir until combined.
6. Distribute the mix eventually between 3 bowls.
7. Add the flavors.
8. Bake for 25mins
Dark Chocolate Raspberry:
1/2 Cup raspberries
1/4 Cup dark chocolate chips
1/2 Cup blueberries
1/4 Cup slivered almonds
(Next time I probably wont add the almonds. I thought the piece were way to big and Asher had no interest.)
1/2 Cup peanut butter
squirt of jam on top
I got this idea from my mom. She is always making these peanut butter banana smoothies and Asher loves them! I thought "what a great breakfast idea." I love making foods that I can make ahead and freeze. That is how I made up these frozen yogurt bites.
1/2 cup peanut butter
1 cup vanilla yogurt
I added all the ingredients in the blender and blend until smooth. I got this awesome silicone mini muffin tin at Bed Bath & Beyond. I then poured the mixture into my muffin tin and added a popsicle stick in the middle. That way once they are frozen Asher is able to hold it himself!

My child is a very picky eater. One week he loves Mac n Cheese. The next he wants nothing to do with it. I usually cook 3 to 4 times a week. It all depends on my work schedule. Some weeks I don't get a lot of cooking in and feel like I don't know what to feed Asher. Here are 3 quick and easy foods I made last week!
Cinnamon sugar PB&J:
2 Slices of bread
Butter your bread. Place cinnamon sugar mixture on the buttered side of the bread. Place bread in the toaster oven until lightly browned. Remove from toaster oven and add your peanut butter and jelly.
1 can of crescent rolls
cheese hot dogs
Cover a hot dog with crescent roll. Then cut into pieces. Place on baking sheet. Bake at 350 for about 8mins or until crescent roll is lightly browned.
Pizza roll ups:
1 can of crescent rolls
Unroll crescent dough. place pizza sauce and mozzarella cheese on top. Roll the crescent dough up. Cut into section. Place on baking sheet. Bake 350 for about 8 mins of until crescent dough is lightly browned.
